  • 1/2 cup Healthworks Golden Berries
  • 1 cup water
  • 2-3 tbsp maple syrup (depending on how sweet or tart you want the bars)
  • 8 oz dates, chopped (about 1-1/2 cups chopped)
  • 1-1/2 cups gluten-free quick oats
  • 1 cup gluten-free oat flour
  • 1/4 cup coconut sugar
  • 1/4 cup erythritol (or baking Stevia)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup Earth Balance Soy-Free Margarine*, melted

  1. Preheat the oven to 375 degrees F.
  2. Chop the goldenberries and simmer them in the water and maple syrup until they soften a bit (about 5 minutes). If you’re short on time, you could leave the goldenberries whole, but the tart flavors won’t be distributed as evenly
  3. Chop the dates and add them to the goldenberries and simmer some more until the mixture has thickened and the water is gone, about 5 more minutes. Set aside
  4. In a medium bowl, stir together the quick oats, oat flour, sugar, erythritol (or baking Stevia), baking soda, and salt until well mixed
  5. Melt the margarine in the microwave for about 30 seconds and add to the oat mixture and mix well
  6. Take about 2/3 of the oat mixture and press it evenly into the bottom of a 8-inch or 9-inch square baking pan
  7. Spread the date mixture evenly over the pressed oat mixture
  8. Sprinkle the remaining oat mixture evenly over the top of the dates and gently press it into the dates
  9. Bake for 20 minutes
  10. Allow bars to cool for 10-15 minutes before slicing and serving
  11. Enjoy!
