    It’s watermelon season! This sweet and passion-red fruit is a perfect ingredient for summer! Mix together with fresh mint leaves and halloumi cheese, sprinkle with pumpkin seeds for an added crunch, the sweet and salty combination is just mouth-watering! As tasty as it looks, this refreshing watermelon salad is a perfect appetizer for potluck, picnics, sunday-brunches, and is easy to prepare!

     Great refreshing appetizer:

    Handful Finely Chopped Mint leaves

    ½ cup Arugula

    Halloumi Cheese (chopped into squares)

    Thinly Sliced Red Onion

    Chopped Cucumber

    Diced Watermelon

    Healthworks Pumpkin Seeds

    Honey

    2 tbsp Olive Oil

    Lemon Juice

     

    1. Mix all ingredients together in a bowl, except the cheese and honey
    2. Pan-fry small cubes of the halloumi cheese and drizzle the honey
    3. Top the salad with the grilled sweetened halloumi
