Antioxidant Packed Pitaya Bowls

Gorgeous vibrant pink Pitaya Bowls are nearly as pretty as they are delicious. Pitaya, also called Dragon fruit, is a beautiful tropical fruit, full of fiber and bursting with nutrients. Packed with antioxidants and vitamins, these Pitaya Bowls are gluten-free, paleo and vegan, making them the perfect healthy snack or breakfast!

Ingredients (2 servings)

  • 12oz frozen pitaya cubes
  • 1 frozen banana (sliced)
  • 1/4 cup coconut water

Toppings

  • 1 small banana (sliced)
  • 1/2 cup mango (chopped)
  • 1 kiwi (peeled and sliced)
  • Handful of raspberries
  • 1/4 cup pomegranate seeds
  • 2 tsp Healthworks Chia Seeds
  • Coconut flakes

Instructions

  1. In a blender, blend pitaya, banana and coconut water until smooth
  2. Scoop mixture into wooden bowl, then top with banana, mango chunks, kiwi, raspberries, pomegranate seeds, chia seeds and coconut flakes, Enjoy!
